Almond & Oat Cookies GF, DF & RSF

Gluten Free, Dairy Free & Refined Sugar Free, Almond and Oat Cookies!


They are delicious, soft inside and crunchy outside, a perfect combination!


A Bonus that they are High in Protein if you choose to add the special ingredient!


1 Batch makes approx.

24 cookies.


These are perfect for any occasion or celebration.


RECIPE:


Ingredients:

1c Regular Almond Flour

1/2c Defatted Almond Flour

1 1/2c GF Rolled Oats

150ml -180ml Maple Syrup (adjust according to your preference)

80ml Unrefined Olive Oil

1/2c Pure, Unflavored Collagen Powder

2 Large Eggs (Free Range if possible)

1tsp Pure Vanilla Extract

1/2tsp Himalayan Salt

1/2tsp Ground Cinnamon

1/2tsp Baking Soda


Pre-heat oven to 180 degrees C with fan, Line a baking tray with wax paper.

These cookies can be decorated or left plain before baking.


Mix all your ingredients till well combined.

Let the dough sit 5-10 mins to absorb the moisture and to stiffen up. This dough is sticky, so you'll need a spoon to scoop into the tray.


Use your small ice-cream scoop to form equal size scoops, placing them a minimum of 2 inches apart.


Bake for 10-12 minutes.

Remove from oven, turn cookies over, if they have sticky bottoms you can place them turned over back in the over for 2-3 minutes to crisp the bottom as well.


Let them cool and serve with your favourite hot beverage!
